Udupi Sambhar Masala
Ingredients : Arhar Dal 100 gms, Bottle Gourd 150 gms. Brinjal 2, Drumsticks 5, Tomatoes 3, Red Chillies 2, Onion 2, Coriander, Black Mustard Seeds 1/2 tsp. Curry Leaves. Fenugreek Seeds, Asafoetida, Clarified Butter, Salt (as per requirement), Sprinldz Udupi Sambhar Masala 3 tsp.
Directions for use : Heat Oil in A Pan. First Fry Fenugreek Seeds then add Chana Arhar Dal. Stir and Saute for Sometime. Once the Mixture Changes colour pressure Cook it by adding water. After Sometime add all the finely chopped veggies in the cooker and saute for 4-5 Minutes. In a Small Frying Pan, Heat 2 tsp Clarified Butter. Crackle the Mustard seeds first. Then add 2 dry Red Chillies, ‘A tsp Asafoetida, 20-25 Curry Leaves. Fry till the mixture Changes Colour. Pour the whole Tempering in the steaming Hot Sambhar well. Now Add 3 tsp Sprinldz Udupi Sambhar Masala and Salt (as required). Simmer Sambhar for about 5-10 Minutes. Later Garnish with Coriander Leaves. Serve the Sambhar Hot with Steamed Rice, Idli, Dosa or Medu Vada. •
